Ingredients:
For pasta:
- 450 grams IDEAL GOURMET LINGUINE
- ½ lbs Snow peas cut diagonally into thin slices
- 1 ½ cups Bean sprouts
- 2 pieces Scallions, including green tops, chopped
- 1 piece Cucumber, peeled, halved lengthwise, seeded, and sliced thinly
- ½ cup Peanuts, chopped
For the peanut sauce:
- 2 cloves Garlic
- 3 tbsp Soy sauce
- 1/3 cup Peanut butter
- 2/3 cup Low sodium chicken broth/homemade stock
- 1 ½ tbsp Lime juice
- ½ tsp Red pepper flakes
- ¾ tsp Salt
Procedure:
For pasta:
- Cook IDEAL GOURMET LINGUINE according to package directions.
For the peanut sauce:
- In a blender or food processor, combine garlic, soy sauce, peanut butter, chicken broth, lime juice, red pepper flakes, and ½ teaspoon salt.
- Puree until smooth.
To serve:
- Stir now snow peas and bean sprouts and cook until the vegetables and Ideal Gourmet Linguine are just done.
- Drain and toss with peanut sauce, remaining ¼ teaspoon salt, scallions, cucumber, and 1/3 cup peanuts.
- Serve with remaining peanuts and sprinkle over the top.
